Further Adventures of SNOW DAY
I'm baking chocolate coffee cookies with a friend now. Once they're out of the oven, we (her, her boyfriend, my roommate and me) are going to go out for pancakes at the all-day diner. We already had a snowball fight made a snowman and snowbaby (with chocolate chips for eyes and buttons and dry pasta for nose). We're acting like five-year-olds, even me. Hey, it's been two years since I've seen snow.
It's nice to have a day off without being too hot for words, worrying about heat exhaustion, and getting gas and food, and wondering when the power will come back on (as was the case with our hurricane days). Even the prospect of making this day up doesn't dint my enjoyment. And yes, I do plan to do some actual writing today, but after lunch. And possibly with a judicious dose of coffee cookies.

My principal wouldn't even let the kids go outside to play in the snow because she was afraid of the phone calls she'd get from the parents, and, of course, Chicago. That disturbs me on more levels than I can explain right now.
The Saints had better beat Chicago tonight. That's all I have to say.

I need to vent, but later after an evening lying around in bed watching House and The Wire. D. and I spent our Friday night drinking margaritas at Chevy's and buying toys for tomorrow night's Toys for Tots benefit. Right now I just need to not think about school for awhile. Definitely this weekend though, over wine and granola baking. Cookies are next weekend. :-)

Here's the coffee chocolate cookie recipe:
* 1 package (300 g) Semi-sweet chocolate chips
* 1/2 cup (125 mL) butter
* 2 eggs
* 3/4 cup (175 mL) granulated sugar
* 2 to 3 teaspoons (10 to 15 mL) instant coffee powder
* 2 teaspoons (10 mL) vanilla
* 2/3 cup (150 mL) all-purpose flour
* 1/2 teaspoon (2 mL) baking powder
Directions:
1. Heat oven to 350°F (180°C).
2. In small saucepan over medium heat, melt most-to-all of the package of chocolate chips and the butter, stirring until smooth. Let cool slightly, about 15 minutes.
OR, combine microwave-safe bowl, microwave on HIGH (100%) until chips melt. Stir until smooth.
3. In large bowl, beat eggs and sugar until well blended. Stir in cooled chocolate mixture, instant coffee powder and vanilla.
4. Stir in flour and baking powder; mix well. Stir in remaining choclate chips. Or, add extra if so desired.
5. Drop 1 tbsp (15 mL) dough onto parchment lined baking sheets. (Dough will be a bit sticky.)
6. Bake 10 to 15 minutes or until top cracks but cookies are still moist inside. Let cool 10 minutes, then transfer cookies to racks; cool completely.
And I know you've probably done all the shopping you're going to do, but in case you still wanted that list from me: I would be happy with Volume 2 or 3 of With the Light: Raising an Autistic Child, or any books about teaching special-needs children or the achievement gap or more Lisa Delpit (sic?). Basically, any education book that doesn't make one feel like an unfeeling jerk for not dedicating your *entire* life to the kids. *g* I would also be very happy with pralines!
And I'll try to give you a call today after I'm done with my writing and planning, but you can call me any time. You'll be a welcome distraction! ^_^
