Sorry for the late reply, but I spent Saturday cleaning my room and going to a holiday party, so I wasn't online (shock! horror!). Hope you're feeling better today.
2. In small saucepan over medium heat, melt most-to-all of the package of chocolate chips and the butter, stirring until smooth. Let cool slightly, about 15 minutes. OR, combine microwave-safe bowl, microwave on HIGH (100%) until chips melt. Stir until smooth.
3. In large bowl, beat eggs and sugar until well blended. Stir in cooled chocolate mixture, instant coffee powder and vanilla.
4. Stir in flour and baking powder; mix well. Stir in remaining choclate chips. Or, add extra if so desired.
5. Drop 1 tbsp (15 mL) dough onto parchment lined baking sheets. (Dough will be a bit sticky.)
6. Bake 10 to 15 minutes or until top cracks but cookies are still moist inside. Let cool 10 minutes, then transfer cookies to racks; cool completely.
And I know you've probably done all the shopping you're going to do, but in case you still wanted that list from me: I would be happy with Volume 2 or 3 of With the Light: Raising an Autistic Child, or any books about teaching special-needs children or the achievement gap or more Lisa Delpit (sic?). Basically, any education book that doesn't make one feel like an unfeeling jerk for not dedicating your *entire* life to the kids. *g* I would also be very happy with pralines!
